This sauce is really great. Extremely versital and tasty – I used in on rice noodle pasta, spiralized zucchini noodles, a dip for crackers, you name it!
Ingredients
- 2-3 tbsp Fresh Lemon Juice about 1/2 of a lemon
- 1 cup Fresh Basil Leaves remove stem, packed fairly firmly in cup
- 1 cup Fresh Arugula packed fairly firmly in cup
- 1/2 cup Pine Nuts sub unsalted pecans, walnuts or pumpkin seeds
- 1/4 cup Nutritional Yeast
- 1 tsp Apple Cider Vinegar
- 1/2 tsp Jane's Mixed up Salt can sub regular salt
- 4 tbsp olive oil
- Salt and Pepper to taste
Servings: 1/4 cups or so
Instructions
- Blend all ingredients into a food processor till smooth paste forms. If it's too dry and pasty, add more olive oil or a few tbsp of water. If it's bland, add more lemon/ACV and salt and pepper. If it's not cheesy enough for you, add more nutritional yeast. If you go too heavy on the yeast, you may need to add water to thin it out a bit. Just keep working this till you make the flavor you want.
