Tropical Oatmeal

This oatmeal dish is filled with healthy ingredients and is super tasty.  I made this on the second morning of Sage Grayson’s VIP retreat back in January 2016.

Ingredients
  • 2 cup Filtered Water
  • 2 cup Almond Milk
  • 2 1/2 cup Gluten Free Oats Bob's Red Mill is my fave
  • 1/2 cup Chopped Dried Apricots
  • 1/2 cup Unsweetened Shredded Coconut
  • 3 tbsp Chia Seeds
  • 4 tbsp Agave
  • 1 pinch Sea Salt
  • 1/4 cup Coconut Cream

Instructions
  1. Bring water and almond milk to a boil, add oats. Stir often and cook for 10 mins.
  2. Next add apricots, shredded coconut, chia seeds and coconut cream (can sub coconut milk - change to 1/3 cup) and cook another 5-10 mins. If mixture is too dry then add more liquid. Chia seeds plump when the are in water, which soaks up a lot of liquid.
  3. Finish by adding agave and a pinch of salt, stir well and serve. Can top with a bit of agave and shredded coconut.
